Artic Vodka Recipe: Shortbread Dressed for Holi

Shortbreads for Holi:

Ingredients:

180 gms butter
1 cup sugar
2 tbsp Artic Orange Vodka
2 tsp orange juice
Zest of 1 orange
2 cups flour
180 gms butter
1 cup sugar
2 tbsp Artic Vodka
2 tsp lemon juice
1 tbsp of dry lavender
2 cups flour
180 gms butter
1 cup sugar
2 tbsp Artic Apple Vodka
2 tsp apple juice
1 tbsp thick apple sauce
2 cups flour

Method:

  1. Preheat oven to 160C.
  2. Line a pan with parchment paper or silicone mat.
  3. Cream butter and sugar into a mixing bowl and beat until smooth.
  4. Mix vodka, juice and zest. (use the flavor according to the recipe)
  5. Add flour and knead into mixture until smooth dough is formed
  6. Place dough in refrigerator to cool.
  7.  Roll the dough to ½ cm thickness and cut in desired shapes. I am cutting them in squares.
  8. Bake for 7-10 minutes or until dough just begins to turn golden brown.
  9. Cool for 30 minutes.
  10. Top it up with rolled fondant or royal icing or sugar icing.
  11. Enjoy with thandai this holi !

Black currant and Mint turnovers

  1. Place a heaped tbsp. of blackcurrant jam and some torn mint leaves on 10-15 cm squares of puff pastry or sugar dough
  2. Moisten the edges with milk, fold the pastry in half on the diagonal and press the edges together to seal
  3. Make a couple of small slits in the top with a knife then brush with milk and sprinkle with sugar if you fancy that.
  4. Bake at 220 c for 12-15 mins!
  5. Ps- don’t add too much jam, else it will escape and burn. Also if like me u don’t like blackcurrant jab go for one you love!
  6. If you don’t have puff pastry, what works well is the wonton skin or filo dough!
  7. Enjoy!

New month …in year end!

Hello hello…Its dec 1st!! Why am I excited?? Just like that! And it’s a new month; my last month was kind of crazy even though good things also happened like TED. With Ted came a whole bunch of new friends.I know some I will keep for life. Hoping the coming weeks have some great goodies for me in store 🙂

You know I have this habit of saying “then tell stories”. It basically means what else is going on or “aur batao” in Hindi as we say it. So I was talking to a friend in USA and on me saying the same to her, she went on and on about how she is missing me and the rocky road bars I use to make and how she wishes to see the Christmas in India. (I think I need to tell her a story in return of how Diwali is the Christmas she is imagining).Anyhow and that got me craving for the rocky road bars I use to make to snack on for friends sometime. Me being me!-The crazy late night bird, I decided to bake in the middle of the night and I must say the end result was beautiful. It did require some patience but it was totally worth it. I will give the recipe in few days once I tweak the amounts.
