1 each Ripe Papaya, peeled, seeded, diced

¼ cup Onion, diced

¼ cup Pineapple, diced

1 tsp. Garlic, minced

½ Jalapeno, minced

1 Lime Zest and Juice (can replace by lemons)

¼ cup Brown Sugar

1/4 cup Cilantro, chopped

2 tbsp. Rice Vinegar

1 tbsp. Tabasco

2 tbsp. Mirin (optional- Japanese rice wine)

To taste Salt & Pepper



· In large pan, combine onion, garlic, pineapple, all liquids and sugar, and jalapeno. Cook about 10 minutes, stirring often.

· Add half the amount of papaya, and cook 7-8 minutes, stirring often. A syrup should be present.

· Add cilantro and lime zest. Cook 2-3 minutes.

· Fold in rest of papaya. Cook 2 minutes.

· Season and cool.

chutneyOkay weekend is here, I thought I would party or go out but been occupied with this or that. Made few cakes for orders…one of my client’s favourite colours is Purple so made purple flowers. Magnificent it was!!

What’s for dinner….a roti with mango chutney and some dahi (yogurt)…it’s not the most extravagant meal but it’s pleasurable in its own way! Simple is delicious!

Here is the recipe for the mango chutney:


Ingredients Amounts

Onions, small dice 1 no.
Garlic, minced 1 ½ clove
Curry powder 1 ½ tsp.
Turmeric ¾ tsp.
Ground coriander ¾ tsp.
Vinegar (red wine or malt) 1 ½ cup
Sugar ¾ cup
Dried chilies as needed
Cloves 3 ea.
Salt t.t.
Mangoes, 3 ea.

1. Sweat onion and garlic.
2. Add spices and sauté until aromatic.
3. Add vinegar, sugar, chili, cloves, salt, and mangoes. Simmer 30 minutes.

Note: Cut ends from mango. Slice off the skin. Cut next to the pit on both sides producing 2 halves. dice cut in shapes you like…I suggest cut randomly!
