Immunity Booster Soup…

Its chilly outside and I hustle to get home after having lots of meeting, chuck my bags and rush to get a cup of impetuous tea. Long tiring day and I want something yummy for dinner but at the same time I don’t have the energy to cook something fancy.

Sometimes I love the winters in Delhi. Everywhere, there is the enthralling smell of roasting peanuts. It is also a time when Delhi pulsates with the vivacity of Christmas and New Year. Trimmed Christmas trees, swinging bells and their euphonic chimes make for a dazzling day, and in the evening, when the streets and malls are decorated with lights, it surely creates an notable sight but the traffic kills you!! Anyhow a big bowl of soup is what came to my mind.

And this is how I went about it:

For Stock:

One lemon grass-1
Lemon-1/2
Ginger- approx 50 Gms
Kaffir lime leaves-2/3
Some Thai basil
Dry red chilli-2/3
Couple of pink pepper corns and black pepper

Add all these in a big pot of boiling water. And simmer for about 30-45 mins.
The stock will have the most amazing flavour you could imagine.

Herbs and Spices

For the soup:

2 bok choy
1 red pepper sliced
2-3 leaves of Thai basil
1 box of mushroom
1 carrot sliced
1 small broccoli
1 box of extra firm silken tofu
2 tsp of chilli paste
2 tsp lemon juice
Coriander and ginger for garnish.
Salt and some sugar to taste

It can’t get easier than this recipe.
Julienne everything and once the stock is ready just add stock to a bowl of vegetables.
I don’t cook any of these vegetables coz I like that crunch factor in it. Serve in a bowl with fresh coriander and ginger sprinkled over. Enjoy!! This soup is just wonderful as it has a potent combination of herbs and spice and just smells wonderful.
Easy on the stomach and works as an immunity booster and helps fight the cold!

Coconut curry

My pantry stock is moving slow. I haven’t been cooking a lot lately. Diwali season, work, Ted India coming close and 1000 other things on mind I am lazy to cook and eat whatever Mom makes. She is my inspiration always. Check what I had to say about her here.

Hats off to people who can blog everyday, I follow so many blogs but I never get the chance to comment. I read them as bed time stories on a regular basis. I think that blog fever hasn’t gotten to me yet and nor has the twitter fever. I am quite internet savvy but not so much. I don’t know how people manage to twit 24/7..its quite an art /task to accomplish! When I do I shall let you guys know 🙂

Dinner was simple food – coconut curry with rice
I don’t have an exact recipe coz I put whatever was in the fridge to the masala’s my hand could reach, literally being on phone with a customer who was ordering a cake 😉

Take some oil; add some ginger garlic and green chillies, a small diced onion and sauté till golden brown. Add some lemon grass galangal, kaffir lime leaves if you have them else the Rs.20 Thai curry paste will also do and sauté for next min or so. Add in veggies that you have at home. My collection was sort of boring (Thai green eggplant, mushrooms, yellow peppers, baby corn, broccoli, tomatoes, but the addition of tofu added to the textures of veggies).Add a can of coconut cream to it. Give it a boil and it’s done! Voila enjoy with steamed rice and some freshly squeezed lemon juice.
So guess what I added in the curry to it give it a crunch??
