1 each Ripe Papaya, peeled, seeded, diced

¼ cup Onion, diced

¼ cup Pineapple, diced

1 tsp. Garlic, minced

½ Jalapeno, minced

1 Lime Zest and Juice (can replace by lemons)

¼ cup Brown Sugar

1/4 cup Cilantro, chopped

2 tbsp. Rice Vinegar

1 tbsp. Tabasco

2 tbsp. Mirin (optional- Japanese rice wine)

To taste Salt & Pepper



· In large pan, combine onion, garlic, pineapple, all liquids and sugar, and jalapeno. Cook about 10 minutes, stirring often.

· Add half the amount of papaya, and cook 7-8 minutes, stirring often. A syrup should be present.

· Add cilantro and lime zest. Cook 2-3 minutes.

· Fold in rest of papaya. Cook 2 minutes.

· Season and cool.
