1. Pare the zest off in long strips from at least 2-4 lemons, avoid as much of the white pith as possible.

2. Add to a pan with 200 gms sugar and 200 ml water and bring to a simmer, stirring until the sugar melts.

3. Remove from heat and give the lemon zest a bit of a bash to release its oils.

4. Juice the 4 lemons into a pitcher

5. When the sugar syrup has completely cooled, strain, and then mix it with the lemon juice.

6. Add water (sparkling also works very well) to taste.

7. Add sprigs of mint and pieces of peaches/strawberry/raspberry and allow infusing a little before serving.

8. And now go make some… and enjoy your day!

Black currant and Mint turnovers

  1. Place a heaped tbsp. of blackcurrant jam and some torn mint leaves on 10-15 cm squares of puff pastry or sugar dough
  2. Moisten the edges with milk, fold the pastry in half on the diagonal and press the edges together to seal
  3. Make a couple of small slits in the top with a knife then brush with milk and sprinkle with sugar if you fancy that.
  4. Bake at 220 c for 12-15 mins!
  5. Ps- don’t add too much jam, else it will escape and burn. Also if like me u don’t like blackcurrant jab go for one you love!
  6. If you don’t have puff pastry, what works well is the wonton skin or filo dough!
  7. Enjoy!

Whats for pudding today-chilled mango sago!

Abundance of mangoes these days, I mean the variety, the colours the taste. Amazing stuff! Give this recipe a try! I enjoyed it after my meal. Simple and delicious!!!

Vanilla Sauce:

500 Gms Milk
500 Gms Heavy Cream
100  Gms Yolks
50 Gms Castor Sugar
2 Vanilla Pods

Boil Milk and Cream with Half sugar with the vanilla pod.
Temper the yolks with the boiled cream and add to the Milk mixture.
Strain and sit to cool.

Water and tapiocaTapioca Pearls

 

Mango Puree –around a cup (use fresh dusheri mangoes)
Mango pieces – to taste
Coconut Milk- to tasteSoak the sago/tapioca pearls and boil.Add Tapioca with the vanilla sauce and make to desired flavour mango/coconut,

Pour in a martini glass with coconut cookie or angel food cake and garnish with mangoes almond flakes and mint I am putting a video too of the 9X show once I did and I taught the same! EnjoyMango Sago Dessert
